Nothing says comfort food like a decent pie – and as with many things, the basics done properly make a huge difference. Stephen Lindsay’s award-winning pies don’t fail to deliver and the opening of this local bistro is the next step in his plan to bring handcrafted pies to Edinburgh. Refreshingly, there isn’t a huge selection of out-there fillings, instead the emphasis is on using quality, local ingredients. The steak and ale pie is generously filled with tender, slow-cooked beef and has the right proportion of pastry to soak up the juices. If you’re hungry don’t miss the surprisingly dainty starters such as ham hock and vegetable terrine, served with an enamel pot of fierce piccalilli. And if there’s any room left, desserts include cakes and home baking, making Pie Not a good local spot for coffee if it’s too early for a pie.
