The 2019/20 edition of The List's Eating & Drinking Guide is out now – only £5.95 (+p&p).

There’s much to applaud in this new venture based in the DoubleTree hotel on the north side of the Queensferry Crossing. The views for one; a broad wall of windows gives a fabulous outlook to the Forth and the pristine bridge, while throwing natural light on a chic and spacious bistro with sculptured wooden ceiling, open kitchen and a mix of booths and comfortable leather seats. An efficient team of floor staff keep things running smoothly and the wine list is short but punchy. The menu is sprinkled with cheffy touches like wasabi emulsion, beetroot powder and coal aioli and hints of the kitchen’s spirit are present in appetisers like blinis topped with whipped brown crab meat and spiky tarragon hollandaise. Superb rope-grown mussels are escorted by Cullen skink which is rich and creamy with deep, hay-smoked notes. From the mains, seared salmon is a triumph, scorched and intensified by harmonious trimmings of chorizo, fennel, squash and sage. Creativity carries through to desserts where a chunky chestnut mousse is boosted by Marsala honey jelly and dotted with crispy scorched meringues with sweet, gooey centres.
