It takes great skill to combine mustard agave, Espolòn tequila, banana liqueur and burnt orange cordial and still accomplish an exceptional elixir that you're reluctant to put down. These are just four of the nine ingredients that make up the Colonel Mustard in Ross Bryant and Jason Cormack's speakeasy. The compact list of often bourbon or rye focused but always audacious cocktails is presented in a brown envelope marked ‘confidential’ and the private detective theme doesn't stop there. If you're not in the know, sussing out the camouflaged entrance may be a little challenging. But once found the dimly lit thirty-five seater decorated with whisky casks, mahogany cabinets and exposed brick is all too comfortable. One drink is created with soy sauce aged Daffy's gin, another a syrupy rum concoction with activated charcoal and a third garnished with a locally made macaron. But who's counting? Loosen up to the jazz playlist and discover unusual flavours that just work.
