A speciality coffee roastery founded by a young Edinburgh-based Aussie, showcasing their single origin beans in a pop-up coffee bar on the Grassmarket. The minimalist and bright space features cream brick walls, a chesterfield couch, and a long wooden bench with retro lab stools. The kalita brew, a pour over designed for even extraction, is prepared with Karimikui Kenya beans producing an exceptionally sweet coffee with red berry notes, a lemon acidity and rhubarb finish. For those preferring a creamier cup, the flat white is well executed with smooth milk and great depth of flavour. The Obadiah beans, sourced from Africa and South America, are manually roasted in Sofia, Bulgaria, where the goal is to help the local community. This worthwhile endeavour makes the enjoyment of every cup even more pronounced.
