Part of the Maki & Ramen family (with one relative just around the corner on West Richmond Street and another on Fountainbridge), space is tight around the bar in this pocket-sized sushi joint, but if you can find a free stool you’re in for a treat. As chefs sharpen knives, slice open fish and carve veg into neat strips behind the counter, customers can choose from deep, wide bowls of rich ramen or a selection of beautifully light, fresh sushi and sashimi: options include Scottish sea bass or mackerel, Thai squid, Vietnamese octopus or Japanese hamachi. Flavours are cleverly balanced, the presentation is excellent and the experience is memorable (depending on how much of the sake you enjoyed along with the food – there are four premium varieties to choose from).
