Bonello is a surname: Pauline is the chocolatier, son Jacob specialises in sugar craft, and Anthony works on the business side. Fairtrade couverture is hand-tempered, resulting in pretty chocolates and caramels filled with fresh, often local flavours: herbs from their garden infuse rosemary and olive oil, tarragon and mustard, and thyme with heather honey chocolates, and the run of a dark chocolate filled with blackcurrant pâte de fruit and juniper ganache was limited to the output of their blackcurrant bush. These are made up into orders for weddings and events, commercially branded chocolates, and local restaurants and hotels.
