Ethics and health (or ‘vital goodness’) are at the forefront of Almighty Foods’ nutrient dense, vegan creations, handmade using traditional methods at Molly Jacob and Josh Adams’ certified organic unit in Glencarse. The self-styled superfood alchemists make ‘botanical raw’ chocolate, which uses unroasted beans processed below 42⁰C – but that’s just the beginning. Their take on a white chocolate bar, for example, is the Golden Blonde, made of cold-pressed cacao butter, cashews, evaporated coconut sap, coconut flesh and Madagascan vanilla. Nuts and seeds are soaked until they sprout (or activate) then slowly dehydrated and stone-ground to use in nut butters or chocolates. Only founded in 2015, their products are flitting onto shelves in health and ethical food shops around Scotland, and they have imminent plans to open a roadside botanical chocolate shop.
