Greentoft Farm Produce
Greentoft Farm’s Thelma Bruce has been a regular fixture at the monthly Orkney farmers’ market for many years. She started off as a stallholder selling free-range eggs from her family’s Deerness farm, before using the surplus to expand into baking. Bruce’s traditional Orkney baking – including shortbread, fatty cutties and bere bannocks – using Orkney milk, butter and of course her own free-range eggs, has earned her a loyal following in the Orkney mainland. She actively encourages her regular customers to request new products and is always happy to try out different recipes.
