An artisan producer of continental-style handmade charcuterie using Orkney produce and fresh herbs and spices, operating from the northern isle of Rousay. Brian Noakes, a pharmacist by training, set up the company in 2015 in a bid to combine his passion for good produce with his knowledge of chemistry. Products include bresaola, chorizo, salami, lomo (pork loin) and even goose prosciutto using the wild geese that cause such over-population problems in Orkney. Infused with aromatics like peppercorns, fennel and paprika, and displayed in classy packaging, their products are available in deli outlets and on restaurant menus around Orkney, with hopes to sell throughout Scotland as the business expands.
