Setting up in business with just 12 cows in 2013, this small family business run by Naomi and Russell Bremner now boasts a herd of 47 buffalo, and the intention is to expand further. Theories abound that Orkney grass makes the meat more flavourful and the milk richer – and, since buffalo meat is lower in fat than standard beef and is a valuable source of omega-3 fatty acids, it seems to make a healthier choice for your burgers and burritos. The meat is available from shops and on menus around Orkney, and the buffalo trailer can be found trading in Kirkwall from Monday to Saturday, offering burgers, sausages and steaks as well as daily special innovations which might include BBQ pulled buffalo, buffalo curry or chilli. The Bremners are also happy to cater for private events and there are plans afoot to start cheese production using the rich creamy milk, just as soon as they find time.
