This tiny two-man business is run by brothers Tom and Aron Bryson, who catch shellfish from their boat the Kara Louise. The brothers mainly supply lobster and brown crab to restaurants and locals, and when in season they also catch mackerel, velvet crabs and sea urchins – hand-dived scallops might be added to that list in time. As locals the Brysons care deeply about the Ayshire coastline and sustainability: every single lobster and crab is measured to ensure it is above the minimum size and anything caught that has eggs is returned to the ocean to breed. Lobster are normally available from April/May to December; mackerel from May to October, and brown crab, velvet crab and sea urchin all year round.
