The first bottle of Crossbill was uncorked in December 2013, kicking off Jonathan Engels' second venture. His first brand, Pincer Vodka, can now be found in independents shops, bars and supermarkets across Scotland, and with a Scottish gin renaissance underway he has chosen to set his new product apart from the crowd by being the first to use 100% Scottish juniper berries, alongside wild rosehip as the only other botanical. He's even started planting his own bushes, working with the Forestry Commission to re-establish a sustainable juniper crop. The first batch of 200 bottles sold out before the year was over, and the second as quickly - the availability of juniper and the hand-distillation process will keep batches small for now.
