As well as a full range of pies, bridies and locally sourced meats, including venison, free-range Gartmorn chicken and often wild rabbit and boar, T & R Skinner have concentrated on developing a truly unique range of sausages, sold under their Extraordinary Sausage Co brand. The third generation butchers has moved away from the salt, MSG and added water pumped into so many sausages, with a healthier sausage in mind. At first this just meant adding lamb and cracked black pepper for flavour, but this experimentation has now resulted in flavours like banana and Madras, which uses unripened bananas to add a touch of sweetness to a curried sausage, roasted red pepper and halloumi, pear, black pudding and field mushroom and even sticky toffee pudding. These recipes can be used with any meats, but some work better than others - wasabi and pickled ginger goes with chicken, for example, and turkey matches coriander and lime. Pork is bought from Robertsons in Ardrossan, and many of the same suppliers are used as in the current owner's grandparent's day - like the lamb, from a farm two miles away. Buy from the butchers, from Woodhouse Farm Shop outside Kippen, by mail order and soon from an online shop. A Saturday van service also delivers to homes through the area, as far afield as Milngavie.
