This small dairy produces artisan goats cheeses, made by Jussi Stader, who moved to the Highlands after working for many years in artificial intelligence at the University of Edinburgh. She relocated with her family to Bettyhill on the far north coast of Scotland, and by 2012, her reinvention as goat farmer and cheese-maker was complete. She now runs a happy herd of free-range goats and lovingly crafts two varieties of cheese: a soft, spreadable cheese in plain, garlic and herb, paprika and cracked black pepper flavours, and a firmer British Coulommier-style cheese. These can be bought in various local shops in the area, including Bettyhill Post Office, Mace Oasis in Lairg, Durness' Spar, Bews the Butchers in Thurso, the Puffin Croft Farm Shop near John O'Groats, and sometimes also the Storehouse of Foulis. Call in advance and you might be able to buy straight from the croft and say hello to the goats. If you are lucky, you may even be able to buy some goat meat at the croft gate.
