German-born, well-travelled Sebastian Kobelt is a one-man chocolate and patisserie band, working closely with some of Scotland's most prestigious restaurants to make them bespoke chocolate ranges. After three years in The Kitchin and Castle Terrace he now works alone with a small shop on Linlithgow High Street and a workshop nearby. As well as the truffles, tarts and French-influenced patisserie for the shop, he also makes seasonal chocolates for the likes of Gleneagles and the Balmoral Hotel. He made the World Chocolate Finals after winning the German title, and also specialises in sculptured chocolate centrepieces.
