Andrew and Angela Simpson of Camusdarach Hebridean Sheep have been raising sheep in Arisaig for 17 years, alongside maintaining self-catering accommodation facilities in the area. Pure-bred Hebrideans take up to two years to reach a suitable carcasse weight, but by crossing pure-bred Hebridean ewes with Suffolk rams, the process can be sped up without losing eating quality.The flock grazes on the hillsides and dunes, and the Hebridean preference for browsing helps to contribute to conservation grazing in the area. Lamb and mutton in the form of legs, shoulders, chops and mince are available frozen all year round, either by mail order or by calling directly to the farm.
