Run by Douglas and Phyllis Stanger, Kirkwall Bay Shellfish is a name often mentioned when discussing seafood in Orkney. The company buys fish direct from twelve boats that fish local waters, keeping in touch with them via WhatsApp to check on the daily catch, and posting on Facebook to let customers know what they can expect when the boat comes in a few hours later. Fish can be caught almost to order if a chef has a particular hankering for something, but the most usual species to be caught include turbot, monkfish, haddock, lemon sole, megrim, whiting and John Dory. Stanger supplies fresh and smoked fish and shellfish to many restaurants and hotels around Orkney, as well as to the general public from the outlet on the Hatston Estate. (There’s also a mobile fish van that regularly visits the northern islands – check Facebook for updates.) Since fish is smoked on site, there’s a lovely smoky waft to the shopping experience, and to top it all you can select your own live scallops and lobster from huge holding tanks next to the shop.
