Owned by Young's Seafood, Macrae Edinburgh's new 6000m² premises at Livingston were opened in May 2007. They produce hot and cold smoked seafood, prepared shellfish and hand-crafted value-added products for entertaining in partnership with Waitrose.Macrae Edinburgh primarily uses Scottish-sourced fish such as salmon, prawn, crab, scallops oysters, langoustine, trout, herring, haddock and mackerel. Fish smokers use both mechanical and traditional â€˜Cromdaleâ€™ brick kilns to smoke up to 80 tonnes of whole salmon and 40 tonnes of hot-smoked mackerel every week. A range of different fuels are used for smoking including oak, beech, birch, peat and heather.The Macrae Edinburgh site is home to the Ghillie & Glen brand.
