Owned by Young's Seafood, Macrae Edinburgh's new 6000m² premises at Livingston were opened in May 2007. They produce hot and cold smoked seafood, prepared shellfish and hand-crafted value-added products for entertaining in partnership with Waitrose.Macrae Edinburgh primarily uses Scottish-sourced fish such as salmon, prawn, crab, scallops oysters, langoustine, trout, herring, haddock and mackerel. Fish smokers use both mechanical and traditional ‘Cromdale’ brick kilns to smoke up to 80 tonnes of whole salmon and 40 tonnes of hot-smoked mackerel every week. A range of different fuels are used for smoking including oak, beech, birch, peat and heather.The Macrae Edinburgh site is home to the Ghillie & Glen brand.
