Purchased by Queen Victoria in 1848, the Balmoral Estate has been the Scottish home of the British Royal Family ever since. It is managed organically, in accordance to Soil Association principles. As part of the Estate's sustainability systems, the population of wild red deer is managed in accordance with the Deer (Scotland) Act 1996, and is sold to butchers and wholesalers across the UK, as is grouse and pheasant. Highland cattle are also kept, the Queen’s fold numbering twenty eight cows, their followers and two bulls. These are kept mostly at the Knocks, Dalliefour and Glen Muick, not far from the village of Ballater. This land produces grain to feed the cattle as well as their grazing. The Estate is the native home of wild red and roe deer. To conserve the natural habitat and the deer's health, the population is maintained at an average of about 2,500 deer throughout the year, with an annual cull of 180 to 200 stags, plus 400 to 450 hinds and 100 calves undertaken. The carcasses are taken down from the hills using traditional stalking ponies, before being hung in the Balmoral Game Larders then collected for processing.
