‘The first commercial brewery in Leith this century’, Pilot made their first brew in mid-November 2013. Directors Pat Jones and Matt Johnson met on the Heriot-Watt Brewing & Distilling masters course – Jones coming from a career in insurance and Johnson with a background as a graphic designer, which explains the distinctive, almost pretty branding (which should do wonders for appealing to a wider audience than the macho beer drinking stereotype). The reception has been warm, with a permanent tap at The Vintage straight out of the gates, and their beers can be found at a long list of Edinburgh’s good pubs: The Bow Bar, The Blue Blazer, Cloisters, The Guildford Arms, The Hanging Bat…they’re probably going to need a bigger kit than five barrels reasonably quickly. The current range, available in cask only for the time being, is made up of 6.4% India Pale Ale; 5% Iced Tea Ale - an amber beer brewed with bergamot oil, Amarillo and Citra hops and four kilos of lemongrass per brew; 5.5% Mochaccino Stout infused with an exclusive coffee roast, organic cocoa nibs and Madagascan vanilla; and Vienna Pale, a 4.6% take on Vienna-style lager.
