Caroline Henderson is an artisan cheese-maker, producing small batches of soft, semi-soft and hard cheeses from a mobile home on Staney Hill, overlooking Lerwick harbour. All her cheese is made from Shetland milk and vegetarian rennet. Her cream cheese ‘Birls’ come in seven flavours, including oatmeal & black pepper, garden herb, citrus and island spice. She also uses local company Bod Ayre’s seaweed in these and her semi-hard, crumbly Boorik. Peerie Isles are young hoop-drained cheese rounds, and Hairst Mon and Crofters more mature, harder cheeses. Henderson sells from Lerwick Farmers’ Market, by mail order, through local shops including Scoop and the Lodberry Deli, and takes commissions for cheeses and cheeseboards.
