Chocolatier Gemma Karatay learned her craft from a book given to her by her husband Mehmet; after turning professional in 2012, the leap to an industrial-sized space in Newtonmore was made in March 2016. She specialises in truffles made from Fairtrade couverture, eschewing artificial flavours for real ingredients such as pink grapefruit and lavender. Alongside these are candied ginger and peel, handmade nut clusters and chocolate thins, hot chocolate and dipped marzipan, all sold with a commitment to give one percent of turnover to conservation charity, the John Muir Trust.
