The UK's most northerly cheese-makers, Jay Hawkins and Dilys Evans started selling produce in 2010 - based in an old smokehouse 28 miles from Lerwick, they're closer to the Arctic Circle than to London. Each of their 11 cheeses are hand-made in small batches using milk from the Shetland Farm Dairies Cooperative, then laid to mature from 6 weeks to 12 months. All are free of unnecessary chemicals, colourings or preservatives, and are vegetarian and gluten-free. Their range includes hard cheeses Soothe Mooth, Sandstinger, Zetland cheddar and Monterey Mild. Semi-hard cheese comes in five flavours: cumin, caraway, chilli, piri-piri and chive, all available in slices or waxed truckles. Finally they sell smoked Monteray Jack and soft cow's milk cheese St Ninians. All cheeses can be ordered online, or bought from the creamery, which has a cafe on site and runs tours (£3pp, pre-booking required). Retail stockists are currently limited to the Shetland Islands, though the menu at the Scottish Cafe in Edinburgh has been known to feature Shetland cheese. Hampers, cheese boxes and cheese-making day experiences can also be bought online.
