Donaldsons of Orkney
A third-generation butchery that produces more than sausages and steak pies (though they've won prizes for those too), Donaldsons have a smoke room next to the retail shop where they make their bacon, Orkney smoked beef, hot and cold smoked salmon and smoked venison. In addition they produce around 16 varieties of sausage, excellent haggis and smoked salmon pate. They came to smoked salmon later than their other meats, but for it they were awarded Great Taste's Best Speciality Food in Scotland in 2012. Their most recent accolade is a mention for their hand-raised pork pies in the 2015 World Scotch Pie Championships. As well as traditionally cured bacon they make a whisky-marinaded ham – as delicious as it is pricey. Beef and venison is marinaded in red Orkney wine (made with local berries) before being smoked and hung for up to four months. The butcher shop also sells fish, local chutneys and a few larder items.
