Pitlochry’s Fonab Castle, once the grand Victorian baronial pile of the Sandeman port and sherry empire, is now trying very hard to be a ‘fairy tale’ luxury hotel, right down to its air conditioned dog kennels. The most breathtaking feature of the glass and weathered plank extension, wherein lies the beige leather and mirror lined Fonab Brasserie, is the wall of view over the forested banks of Loch Faskally on the River Tummel. This self-billed ‘can can’ of a brasserie enjoys the reputation as the best, but priciest, eating in Pitlochry, where keen, perjink waiters serve scotch quail eggs with duck confit, posh sliders, grilled asparagus dressed with 15 year old balsamic vinegar and pecorino, venison bangers and mash, chased by decorous desserts. It's basically the classics, upped a grade so guests feel like a prince or princess. You'll fit in wearing a suit or a dress, with a flute of champagne and sunken strawberry balancing on the silent, faux white grand piano, which may finally strike up when fine dining opens in 2014.
