'Animal husbandry is everything,' swears Alan Kennedy, who also owns Blairgowrie butcher D&A Kennedy and three more in Monifieth, Carnoustie and Forfar, and his meat supplies two Michelin-starred restaurants: Edinburgh’s Balmoral Hotel and Inverlochy Castle near Fort William. The butchery’s wild, seasonal, shot game is sourced from nearby Glen Clova estates.
