Ex-chefs Ish & Matt Broadbent established Ocelot in 2013, creating chocolate and its beautiful packaging (Ish is a trained illustrator, Matt's the graphic designer) in a micro-factory in Leith. Ethically sourced organic chocolate is imported from the mountains of Peru and the jungles of eastern Congo, then mixed with organic unrefined cane sugar and natural flavouring ingredients. For a further challenge, they are working on bean-to-bar production. The end result is a concise, award-winning range of bars including bee pollen and mango; 75% Porcelana (a rare and prized Peruvian cacao bean) with salted almonds and fig and orange. These are sold online and from stockists around the UK, with a growing worldwide export list.
