Hugh Black & Sons is a Lanarkshire success story, expanding from the late Wiston farmer Hugh Black’s single shop in 1987, to 11 independent high-street butchers today (including branches in Lanark, Wishaw, Carluke, Airdrie, Coatbridge and Cambuslang) and together employing more than 70 under the management of Mr Black’s sons, Craig and Hugh. Their beef, lamb and pork is proudly sourced from top-end Scottish farms and auction markets (around 650 cattle, 1300 lambs and 750 pigs a year, they report), and then prepared into traditional cuts, alongside cooked meats, puddings, sausages, burgers and pies baked in their Bathgate premises. The group also make their own clootie dumplings, tattie scones and ready meals, and sell John Hannah’s strawberries. They now have a bakery in Cambuslang as well.
