Caithness Chocolates was established in 2011 by Wick native Ruth Falconer, and they fly the flag for Scotland’s northern larder. Having completed a chocolate-making course that gave her the opportunity to train with Chocolate Master Ruth Hinks, Ruth created a range of chocolate that leans on local and Scottish ingredients where possible: these include Caithness-distilled Rock Rose Gin and Wolfburn Whisky, Caithness honey and Isle of Skye sea salted caramel. Hand-made bars, drops, shapes, truffles, dairy-free chocolate and caramels are available to buy from local shops, from Wick farmers’ market and online – if you’re passing by the workshop, close to John O’Groats, you can collect them in person.
