Local abattoirs, like Millers of Speyside in Grantown-on-Spey within the Cairngorms National Park, provide a vital service for an area's cattle, sheep and pig farmers and butchers, keeping ‘food miles’ low for the environment, transport costs low for the producer and consumer, and stress levels low for the animal. Millers of Speyside, which serves the majority of the Cairngorms' livestock farmers, only sells its beef, lamb, pork to wholesale, retail, catering and restaurants, and not, alas, to the general public browsing for a good chop, steak or sausage. However, you can buy and taste their meat from various outlets in the park including SG Mustard in Nethy Bridge, House of Bruar or Grants of Speyside in Grantown – or if you fly to Allens of Mayfair and the Ascot Grill, or even to Monaco and Ghana. Millers are also able to undertake a ‘private kill’ for cattle, pigs and lamb for budding small-holders out there.
