Located at Barrock, just a few miles from Dunnet Head, this smokehouse is the most northerly of its kind on the British mainland, and its proximity to both Loch Duart and the port of Scrabster ensures access to wonderfully fresh salmon and trout, seafood and shellfish. Rare-breed pigs, geese, cheeses and even butter, all sourced from local partners, are also smoked by traditional methods, with John and Christine Inglis employing beech and oak chippings (and old whisky barrels) to good effect. Anglers are welcome to call in with their catch, and the couple can even be persuaded to provide a tour, just so long as they’re not out delivering to the host of businesses they supply, including the exclusive Skibo Castle.
