Searching for the holy grail of healthy chocolate, Jane Shandley and Kate Hamilton make single origin raw chocolate in small batches, putting a strong focus on its nutritional benefits and ensuring it’s even free from traces of the top 14 allergens, including nuts. Organic Criollo cacao nibs are ethically sourced from Peru's Rio Negro Valley, lightly fermented at low temperatures then sun-dried naturally. These are then slowly stone-ground together with organic coconut palm sugar over a period of three days, to protect the nutritional value of the cacoa. Once in bar form, either plain (made of just three ingredients: cocoa beans, cocoa butter and coconut blossom sugar) or with natural, organic flavours like lime, cocoa nibs or wild raspberries added, the chocolate is sold as far afield as Qatar, online and at a host of fine food, health and chocolate shops around Scotland.
