Almost 30 years ago, Castle Maclellan was a small company turning out a handful of tubs of pâté every day from the back of a little deli. Now it supplies supermarkets across the UK with a core range of four pâtés (chicken, mushroom, salmon and duck) and Orkney crab terrine, made with a number of link-ups with local businesses. The mustard in the crab terrine, for example, is from Galloway Lodge Preserves, and the duck is smoked by Perthshire-based Rannoch Smokery. The honey in the chicken liver pâté is from John Mellis, and their seasonal chicken pâté with brandy is sweetened with Galloway Lodge Bramley apple jelly. In 1997, the company was taken over by the Kavli group, a Scandinavian social enterprise that uses commercial profits to support good causes around the world.
