After owning Stockbridge’s Patisserie Florentin for a decade, Lorna Pellet now immerses herself in that holy grail of tea-time: the healthy cake. Producing a list that changes through the year, her creations are variously gluten free, vegan, dairy free, egg free, flour free, reduced sugar and reduced fat. She also delights in adding healthy ingredients both familiar and less so – carrot cake is 50 per cent carrot, for example, and might come dotted with goji berries or infused with wheatgrass, and superfoods like seaweed and algae are regular supplements. She doesn’t scrimp on the good stuff, either – her famous bakewell slice is half frangipane. Most ingredients, including butter, sugar and flour, are organic; eggs are Scottish, free range and organic. Find them at an increasing number of cafés and food shops around Edinburgh and Glasgow, including Earthy, Union of Genius and Loopy Lorna’s Tea House.
