The Wee Boulangerie
Katia Lebart trained in breadmaking and patisserie in France, where you’re not allowed to open a bakery without the appropriate diploma. Her first years in Edinburgh were spent lecturing at Heriot-Watt Uni before she opened the Wee Boulangerie in July 2012. Now those French baking lessons are being put to good use creating slow-proved artisan breads, patisserie and sweet bites. There are around five different breads daily, both sourdough and yeasted, but her signature creations include fougasse, a savoury stuffed flatbread ideal for lunch on the go, almond croissants that sell out daily, and crusty baguettes. Primarily a bakery selling takeaway goods, two little tables make it possible to stop over a soup, or a cup of tea and a macaron.
The Wee Boulangerie is a genuine artisan bakery in the heart of Edinburgh’s Southside. Every day fresh breads, pastries, cakes, and much more are produced on site, as well as delicious treats for breakfast and lunch.
