Dough Re Mi
Cupcakes, bread and patisserie are all made without artificial ingredients, using free-range eggs and slow, artisanal methods. Inbal Kaplan came to Edinburgh in 2002 to study for a PhD in animal welfare, but her attention is now taken by cupcakes – self taught, she creates beautiful decorations of delicate or elaborate intricacy, and always uses organic flour. Look out for Dough Re Mi bread and pastries across town as well, as there’s a thriving wholesale edge to the business – Kaplan’s husband Nir Badini has become quietly famous in Edinburgh baking circles for his sourdough loaves, walnut bread and excellent patisserie. The Dough Re Mi shop is in Bruntsfield (free cupcake tip: recite the magical incantation: 'Surely, madam, this must be witchcraft!' for a complimentary cake), and there's a concession in Ocean Terminal.
