There's been a whisky distillery overlooking the strait at Caol Ila since 1846, although the present building dates from 1974. The Caol Ila family of malts have a fresh, sea-salty tang that's a little less smoky and pungent than other Islay whiskies. The distillery is owned and operated by United Distillers and Vintners plc, part of the Diageo Group, and although most of the distillery's output ends up as a key ingredient of Johnny Walker, the surge in popularity of single malts has earned Caol Ila a place in Diageo's Classic Malts Selection range and a strong following in its own right. Caol Ila single malt whisky is available in five different varieties: 12 year old, 18 year old, Cask Strength, Distillers Edition (which has had a second maturation in fortified wine casks, giving it a fruity character) and new brand The Moch, lighter and sweeter than the flagship 12 year old.
