Starting out as an export business selling the meat from stalking parties, Winston Churchill taught himself butchery in 1990 so he could take control of wildly fluctuating export prices by selling locally. From a tiny building, he has now moved to a purpose-built game larder on their Argyll estate, and taken on two more butchers to process roe and red deer and pheasant from local shoots. They supply parties and events, as well as running an online shop and keeping a busy farmers' market schedule. Winston's son Angus is a full-time stalker, and helps keep that original thread of the business alive.
