Fresh pasta made in Duncan Fildes’ Renfrewshire kitchen is sold at farmers’ markets either to eat as you walk, or to cook at home. He and his partner Ness use free-range eggs, local ingredients in sauces, and a bronze extruder, which gives a slightly roughened surface to the pasta for sauce to cling on to. Carbonara’s a universal favourite, but look out for more unusual combinations, and their seasonal rhubarb crumble ravioli at Queen’s Park farmers’ market in Glasgow and Edinburgh’s Stockbridge Market.
