Ailey Covey and husband Martin produce ‘raw’ chocolate (meaning the beans are unroasted, and temperatures kept below 42⁰C) in tiny batches using Peruvian Criollo cacao. In 2011, a pregnant Ailey started hankering after a ‘no-nasties’ chocolate bar, and tinkering with ethically sourced ingredients turned into a kitchen-table business, still run from their North Berwick home. Each of their 13 flavours is hand-ladled into the bar mould or rolled into a truffle, each is gluten and dairy-free and almost every ingredient is organic. A few of those flavours include coconut, cardamom and lime; maple pecan and raspberry and salted caramel; hot sipping cocoas come in plain Peruvian and vanilla chai.
