Hugo & Judith Vajk have been farming oysters for over 20 years, first in France and the Channel Isles, then in Scotland since 1995. They farm Pacific oysters, not native to Scottish waters. Every year, seed is spawned in a laboratory before being bundled into mesh bags and set on trestle tables on the seabed of Loch Creran, where they take around three years to reach marketable size. Find them at farmers’ markets and festivals, including Oban’s annual Festival of the Sea, or get them packaged up with seaweed and sent via mail order.
