Nadia Ellingham attracted headlines and imitators for her Burns' Night special haggis chocolates, but there's more than niche tastes to her arsenal. There are the handmade chocolates that have fascinated her since she was a child, but also ganache tortes, celebration cakes and chocolate-pimped traybakes. She runs a range of chocolate-making workshops one-on-one, for parties of six from her London Road kitchen, or up to 80 in other venues around central Scotland, as well as tastings, linking with a local craft beer shop for a chocolate and beer pairing evening, for example. Orders for anything from a tray of 12 chocolates to favours for 500 can be posted or collected from the kitchen by appointment, and she sells through the Leith Food Assembly. Keep an eye on Thinking Chocolate’s social media for appearances at local events.
