Mark Williams is a professional forager based in Dumfries and Galloway. He used to forage to order for chefs, but it took the fun out of it, and raised questions about the sustainability of the practice – as he says: 'Money can bring out the worst in people’s foraging instincts'. Now he concentrates on teaching people to find their own food, hosting regular foraging lessons for businesses, parties, friends, family – anyone who wants to learn how to identify and cook wild food. He doesn't just confine himself to his locale, but will come to your neck of the woods (literally, in many cases) in Scotland and northern England to show you what to look for nearby. He'll also bring portable kitchen equipment and homemade bread to help you learn how best to treat it.
