In 2005 at the Gleneagles G8 Summit, Marrbury smoked salmon was the appetiser served to diverse heads of state including the Queen, Tony Blair, George W Bush, Vladimir Putin, Angela Merkel and Silvio Berlusconi, among very famous others. There’s serious dedication that goes into making smoked goods of this quality, including personally 'net and coble' fishing wild salmon from the River Cree, as Vincent and Ruby Marr do every season, then smoking it to a secret recipe that includes juniper and whisky. The smokehouse itself, tucked next to Carsluith Castle on the Cree estuary, is impossibly picturesque, and though it might feel out of the way it makes sense to turn a shopping visit into a lunch one, or – in summer – early evening dining. The menu, overseen by Ruby Marr, revolves round their smoked produce. This is more versatile than it sounds, considering their output includes meat, cheese, shellfish, haggis and sausages as well as salmon, trout and kippers.
