Valhalla must need all the Viking fortitude they can summon to overcome the geographical difficulties of operating from Britain’s northernmost isle. Husband and wife Sonny and Silvia Priest took on this challenge in 1997, and 15 years later produce six ales, in cask and bottle: Auld Rock, Simmer Dim, White Wife (named after the local ghost), Sjolmet Stout, Old Scatness and Island Bere. The last two of these are brewed using bere, an ancient strain of barley thought, appropriately, to have been introduced by the Vikings. Valhalla Brewery outgrew its original building in Baltasound some time ago but finally managed to gain ownership of much larger premises in a redundant building at the former RAF Saxavord station at the north end of Unst. The newly refurbished brewery opened for business in April 2012, complete with small brewery shop.
