Salah Safi is a true entrepreneur. Having moved from Palestine to the UK in the 1970s to study, he opened Jordan Valley in 1991. It has grown to include a huge range of Jordan Valley-branded products sold both in his store, and from many of Edinburgh's ethically minded food shops. He's immensely proud of his pies, pasties, cereal bars and cakes, made in his factory in Fife, and regularly has quinoa bars broken up for customers to try, or gorgeous herby dips and pitta. A secret wholefoods store that's really just a good food store, this is the place for pulses, beans and grains, hummus and vegan staples, tea and spices – generally all at prices cheaper than the supermarket can offer. It's also the place for a good chat with an enthusiastic shop owner, who knows his produce inside out - because he's developed most of the recipes himself.
