Darren Mollan first made a spice blend with curry instructions for his sister-in-law in 2010, when he was too busy to help her in person. Chilli Papas was born soon after, based on this concept: hand-blended spices, with the rest of the recipe included for making a curry from scratch. There are now nine mixes: Mandalay, yellow, fajita, tikka, balti, chilli con carne, Kachin and vindaloo mild/medium/hot. These are sold online, from stockists throughout Scotland (including Margiotta) and England and at food events.
