Scotland's first employee-owned resort offers boasts three restaurants: a child-friendly brasserie, Brambles seafood and grill and upmarket Eighteen69, a Scottish themed tapas restaurant.
Scottish tapas is a fairly new concept but, like its Spanish inspiration, at its heart is the same simple idea of sampling different dishes and sharing. At eighteen69, guests might be keener on the former rather than the latter. Here, generously portioned tapas dishes also share the Spanish commitment to using the freshest local ingredients. Quality Scottish products are to the fore and ingredients like haggis, beef ribs and smoked salmon often have a modern twist: Ayrshire pork-crusted fillet of sole arrives as lightly dusted goujons perfect for dipping. More unusual twists, for example Buckfast beer casserole, showcase a sense of playfulness and innovation. The setting well complements the excellent food – walking into the conservatory at sunset is simply breathtaking. Horizontal blinds turn the perimeters into a film set and standard lamps create warmth and friendliness. In-keeping with the philosophy of tapas-style dining, cutlery is stored at the end of each table and, if you order the recommended three to four dishes, sharing might be a necessity by dessert time as – even if you think you’re full – the memorable cranachan cheesecake is too good to miss.
The Spa Resort is a unique blend of traditional values of service and quality as well as effortless style, which is reflected in the dignified Scottish Baronial Façade and the soft contemporary interiors.
