A Taste of Galloway
The Bairds run Laughtmuirside Farm in Dumfries and Galloway, rearing grass-fed cattle, sheep and pigs as well as local wild game for sale at their farm, their online shop and various farmer's markets. The emphasis is on free-range; their Saddleback pigs live outside and forage, and the resulting meat goes towards the farm's sideline business in hog roasts. They grow their own barley, using it as a supplemental feed when necessary, and they're keen to support the current revival of interest in mutton as a more interesting alternative to lamb. A line of free range geese is also available, and during the Christmas period they're one of the few farm butchers to offer a Three-Bird Roast – a wild pheasant stuffed inside a chicken stuffed inside a goose. A Taste of Galloway also distributes locally-sourced turkey and venison, in season.
